There is a discernable excitement in the air at Pearl, as if each patron had opened an oyster and discovered the lustrous, elusive prize. The indoor and outdoor dining areas and bar are buzzing with diners full of good fortune and good food, jazzed by the return of Brian and Gloria Gilbert to the Vero Beach dining scene. Having overseen the Black Pearl Riverfront and Black Pearl Brasserie in the late 1990s, the Gilberts are back, feeling, no doubt, like Jimmy Stewart after he returned from the brink in “It’s a Wonderful Life.” Yes, diners missed your incredibly fresh and delicious food, but just so we all remember this is not a Hollywood dream, the 21st-century prices at Pearl will offer a jolt of reality to the evening. First let’s bask in the aroma of perfectly prepared mussels ($9). These Prince Edward Island bivalves (a signature appetizer at Pearl’s) are without contest the best I have ever eaten — plump and so fresh they burst out of their bath of roasted garlic and rich wine reduction to explode in the mouth as tiny nubbins of briny succulence. I could have eaten plate after plate and nothing else and been very happy. But there were other appetizers to try. The tomato and mozzarella salad ($9) in a traditional balsamic vinegar reduction was unremarkable, more so because the cheese was said to be made on the premises.
